Dinamica di popolazioni microbiche in verdure cotte: Analisi mediante metodi molecolari

In this work a shelf-life study was performed using a molecular approach with the aim to investigate the microbial population dynamics in cooked vegetables during the normal conservation period. The research allowed to identify the cultivable bacterial population and to plan technological precautions to limit its development, thus delaying the product degradation.
