Взаємозв’язок комплексних генотипів альфалактальбуміну та бета-лактоглобуліну зі складом та технологічними властивостями молока корів української чорно-рябої молочної породи

The effect of phenotypic combination of α-LAandβ-LGgenetic variants on chemical content and technological properties of milk from cows of Ukrainian Black-and-White Dairy breed has been studied. The highest fat content was observed in milk from cows with genotype α-LA АВ/β-LG ВВ. The highest levels of protein and casein as well as the shortest rennet coagulation time were observed in groups of animals with allele В on both genes in their complex genotype. Milk from cows with genotype α-LA АВ/β-LG АВ had the highest lactose content. High heat stability of milk was determined by expression of alleles A of genes α-LAandβ-LGin phenotypiccombination α-LA/β-LG.
