Implicaciones económicas y ambientales de la normatividad ambiental aplicada al tratamiento de desechos en los rastros yucatecos

espanolResumen Este articulo con su enfoque economico ambiental, busca conseguir una vision completa de la disposicion de los desechos animales a partir de un analisis del proceso y costos de contaminacion asociados con el sacrificio. La investigacion se realizo en 5 rastros durante 10 meses, en el Estado de Yucatan, analizando una serie de parametros de la calidad de las aguas residuales y de los pozos de abasto. Tambien se identifico la cantidad de agua utilizada, el numero de animales sacrificados, la infraestructura de tratamiento existente, los subproductos potenciales relacionados a esta infraestructura, y se modelaron algunas opciones tecnicas de tratamiento y cumplimiento. Los resultados sugieren que la situacion de los rastros es muy diferente a la de las granjas (especificamente las granjas porcicolas). A pesar del hecho de que hay serios problemas de contaminacion en los rastros, estos no alcanzan los mismos niveles de los de las granjas. Tanto el uso de agua como la carga contaminante es mucho menor en los rastros. Sin embargo, debido al tipo de descarga en los rastros, los costos de tratamiento son relativamente mas altos y el potencial para aprovechar de los subproductos (para entonces reducir los costos netos de tratamiento) son mucho mas limitados. EnglishAbstract This article, with its economic environmental focus, seeks to provide a complete picture of the disposal of animal waste, starting with an analysis of the process and cost of the pollution associated with the slaughter of animals. Research for the article was carried out in 5 abattoirs across Yucatan, over a period of 10 months. This research analyzed a series of parameters regarding the quality of the residual water and supply wells. Other data collected were the quantity of water used, the number of animals slaughtered, existing infrastructure for the treatment of waste, and the potential by-products related to this infrastructure. Based on this data, models were constructed of some technical options for treatment, and the operation of these was empirically compared with present processes. Results suggest that the situation in the abattoirs is very different from that on animal farms (specifically pig farms). Even though serious pollution problems exist in abattoirs, they have not reached the same levels as those on the farms. Both the use of water and the level of pollution in abattoirs are much less than on animal farms. However, due to the type of waste generated in abattoirs, treatment costs are relatively higher, and the potential for using any by-products advantageously (thereby reducing the net costs of treatment) is much more limited.
