Abstract. Broken rice (called brokens) are rice kernel fragments that are less than three-fourths the length of whole rice kernels (called head rice). Broken rice is less valuable than head rice, it affects the end use of the rice, and it‘s therefore undesirable. Unfortunately, broken rice is an inevitable byproduct of the rice milling process.
