In order to understand microbial contamination of chicken trunk in slaughtering and processing,the article summarized microbial contamination sources in every link of the slaughter and the changes of microbial population,and investigated relevant measures to reduce microbes.It has important significance for controlling bacterial cross-contamination on carcass surface during on line processing links to improve safety,edible,and economic natures of chicken products.
