Effects of multiple chitosan coating on water holding capacity of chilled pork

The effects of different multiple coating films on water holding capacity of chilled pork were studied during storage under 4℃.Pork M.longissimus dorsi was used as materials.Drip loss,purge loss and moisture content were used as indicators.The results showed that during cold storage multiple chitosan coating could decrease the drip loss and purge loss of pork and slow the drop rate of moisture content.The multiple coating film,composed of 0.9% chitosan,0.6% Potassium sorbate,0.25% Nisin and 0.5% acetate acid,displayed the best WHC.The drip loss and purge loss of the pork treated with it were 0.823% and 5.885% respectively,decreasing by 46% and 14% compared with the control group.
