Recent Advance on The Effect of Soil Moisture on Rice Quality

Rice quality not only was effected by its genetic gene, but also by environment factors including temperature, light, water and so on. This paper reviewed the recent advance on the effect of soil moisture on rice quality from the followed four aspects: milling quality, appearance quality, cooking and eating quality, nutritional quality. Furthermore, some suggestions for the research of rice quality in the condition of water deficit were put forward.
