Antioxidant, Antiinflammatory, and Antifibrotic Properties of Quercetin in the Liver

Quercetin (Q) is a ubiquitous flavonoid founded in several natural sources, mainly in skin apples and red onions. Q possesses potent antioxidant properties, as well as metal-chelating property, sufficient reasons for years worthy of investigation. Experimental evidence shows that Q possesses anti-inflammatory and antifibrotic capacities, which together are beneficial for the treatment of liver diseases. This chapter will explain how Q exerts its effect on liver diseases and the relevant aspects of its chemistry and pharmacokinetic and pharmaceutical technologies. Nevertheless, toxicological effects of Q were also reported; for this reason more studies are necessary to determine the best conditions for the use of Q for the treatment of liver diseases.
