Extrusion of Castanea sativa

In Portugal, chestnut (Castanea sativa) is mainly consumed unprocessed. Only a small amount of the exceeding production is used in the candy industry. The objective of this study was to find an alternative industrial utilisation for chestnuts, by extrusion-cooking.
