Influencia de la temperatura en la composición de los racimos de Vitis vinifera L. cv Pinot Noir expuestos al este y al oeste, en distintos estados de madurez

The berrie's components (weigth, sugars, acids, polyphenols) are influenced by the canopy microclimate and the stage of grape maturity, among other factors. The objective of this research was to examine the influence of temperature at cluster level against the grape composition (weigth, volume, soluble solids, total acidity, pH, anthocyanins and Total Polyphenols Index between the east and the west exposure in a vineyard north-south oriented at three maturity moments. Results shown that the clusters exposed to the west presented higher temperature accumulation and were exposed longer to maximal temperatures than the east exposure ones. The weigth and volume of west exposed berries were lower than the east exposed ones in lastest harvest date. No differences were found in grapes soluble solids, total acidity, pH, anthocyanins and TPI among exposures at any harvest date.
