Antimicrobial Activity of Lactic Acid Bacteria Against Intestinal and Food-Borne Pathogens

ABSTRACTSeveral methods for testing interaction between different bacteria were compared. A total of 8 strains and 2 starters of lactic acid bacteria from LB Bulgaricum's LAB Collection, were tested for antagonistic activity against 7 species of intestinal and food-borne pathogens. Lactobacilli showed varying degrees of inhibition. It was dependent on the type of medium, the used method, and on the strain and species of the Lactobacilli or the test-microorganisms.
