Riconoscimento dei difetti negli oli vergini di oliva : confronto fra panel test e sistemi olfattivi artificiali

In the present work results are given concerning a research about the evaluation of an artificial olfactive system in order to determine the organoleptic quality of virgin olive oils carried out by a trained panel. Particular attention was paid to the difference between defective and non defective oils already revealed by the panel.
