EFECTO DE LA RAZA Y EL SISTEMA DE LACTANCIA SOBRE LA CALIDAD DE LA CANAL DE CABRITOS DE 5 RAZAS

We studied the influence of the lactation system on some characteristics of the kid’s carcass of 5 Spanish breeds (Florida, Guadarrama, Payoya, Retinta and Verata). We sacrified 30 animals of each breed, half bred with artificial milk and the other half bred with their dams. We registered hot carcass weight, head, offal and kidney fat weights. Some carcass linear measures were taken. Commercial yield and compactness index of the carcass and tissue carcass composition were calculated. All variables, except carcass yield, were covariated by live weight and means were adjusted to 8.7 kg live weight. Breed had significant effect on all the studied variables, while the lactation affected all variables except rump perimeter and carcass and leg length. There were significant interactions for the live weight, weight of the head and offal, compactness index and all the variables of the tissue composition. The variability for fat was greater than for bone or muscle. The Payoya breed was less affected by the lactacion system than the rest.
