L'olio di semi di Anona (Annona Cherimola, Mill.): studio della frazione acidica e sterolica

In a study of the characteristics of subtropical fruits grown in Calabria was investigated the fatty acids and the sterols composition of seed oil of five Anona clones. The following acids were determined: myristic, palmitic, palmitoleic, heptadecanoic, heptadecenoic, stearic, oleic, linoleic, arachidic, linolenic, eicosenoic, behenic, lignoceric. Among the fatty acids oleic and linoleic are the main components and their amount reaches almost 80% of the total. The sterolic fraction was analyzed by «on-line» LC-GC. Brassicasterol, campesterol, stigmasterol, chlerosterol, β-sitosterol, Δ 5 -avenasterol, Δ 7 -stigmastenol were found. β-sitosterol is the main component (about 60%); important is also the stigmasterol content (about 20%)
