Extraction of Wheat Bran Dietary Fiber with Two Enzymes and Applied Research

This paper studied the optimum process of high temperature resistant α-amylase and alkali protease to extract wheat bran dietary fiber.The optimum conditions were investigated by orthogonal test: the best technical parameters for high temperature resistant α-amylase were 1.2 mL additive amount,85 ℃ solution temperature and 60 minutes solution time.The best process parameters for alkali protease were 1.4 mL adding amount,65 ℃ solution temperature and 40 minutes solution time.The last extraction rate of dietary fiber was 93.6%,which had been greatly improved than chemical method.
