Contenido de macroelementos y elementos traza en muestras de diferentes especies de cefalópodos congelados

Los cefalopodos, ademas, pueden contener metales como los macrolementos (Na, K, Ca, Mg), elementos traza esenciales (Fe, Zn, Mn, Mo) y no esenciales (B, Ba, V). Debido al destacable consumo de cefalopodos congelados, es necesario determinar el contenido de estos metales y su aporte a la ingesta dietetica. Objetivos: determinar el contenido de metales en cuatro especies de cefalopodos congelados (sepia, pulpo, potas y calamares) para evaluar el aporte nutricional derivado del consumo de estos productos, estudiando las posibles diferencias entre las cuatro especies analizadas. Material y metodos: se ha determinado el contenido de macroelementos (Ca, K, Na y Mg) y elementos traza (Fe, Zn, B, Ba, Mn, Mo y V) en 65 muestras de cefalopodos congelados mediante ICP-OES (Inductively Coupled Plasma – Optical Emission Spectrometry). Resultados: el Na ha sido el macroelemento mayoritario (2499 mg/kg peso humedo) en las sepias. El elemento traza destacable es el Zn (7.08 mg/kg p.h.) en las potas. Para la mayoria de los metales estudiados se han encontrado diferencias significativas entre las diferentes especies. Conclusiones: atendiendo al consumo recomendado de productos marinos, como los cefalopodos, el aporte de elementos esenciales no es destacable, asi mismo, el aporte de elementos traza no esenciales, es bastante bajo no suponiendo un riesgo para la salud de personas adultas. Cephalopods could contain metals such as macroelements (Na, K, Ca, Mg), essential trace elements (Fe, Zn, Mn, Mo) and non-essential trace elements (B, Ba, V). Because of the level of human consumption of frozen cephalopods, it is necessary to determine their metal contents and their dietary intake. Objectives: to determine the metal contents of four species of frozen cephalopods (cuttlefish, octopus, squid and shortfin squid) and their dietary intake, as well as studying the possible existence of statistical differences between the four studied species. Material and methods: the macroelement (Ca, K, Na and Mg) and trace elements (Fe, Zn, B, Ba, Mn, Mo and V) contents have been determined in 65 samples of frozen cephalopods by ICP-OES (Inductively Coupled Plasma – Optical Emission Spectrometry). Results: Na (2499 mg/kg wet weight) is the major macroelement found in cuttlefish. The most noteworthy trace element was Zn (7.08 mg/wet weight.) which was found in squid. Statistical differences between the studied species have been found in most of the metals studied. Conclusions: in terms of the recommended intake of seafood products such as cephalopods, the essential element intake is not noteworthy; in addition, the non-essential element intake is low and, consequently, does not pose a health risk to adults.
