Proposal of a methodology for application of generalized HACCP system in water supply organizations

2012
HACCP system is a system that is widely used in the food industry to ensure food safety throughout the food chain from primary production to final consumption. HACCP system can be generalized, expanding the meaning of the term hazard. It covers the types of hazards that are discussed in the original HACCP system, but also the hazards resulting from the appearance of certain nonconformities (errors in operation, failures of devices / equipment, adverse events ...), whose sources can be: people, hardware, software or processed materials, and which may result in consequences for human health, and other consequences (equipment damage, financial losses ...). A water supply organization consists of: employees, engineering facilities (surface or underground source, transport of raw water, water treatment plants, distribution system) and related equipment, with established responsibilities, authorities and relationships. The emergence of nonconformities in water supply organizations at any stage / step of the process of production of drinking water can have negative consequences for safety and health of consumers / staff, but also on safety of equipment and so on. Based on the fact that part of the processes that takes place in different water supply organizations are similar, and that part of the processes are specific, and largely depends on the type of water supply organizations, during the development of methodology typical documents of generalized HACCP systems for different types of water organizations will be generated. The achievements which would be realized during development of methodology, would be given successively to all water supply organizations which participate in development, for the reason of adjustments of resulting documents to their real needs and specificities. The developed methodology and documentation would be put at the disposal to water supply organizations in underdeveloped areas of Serbia, if in development of methodology will participate ministries competent for safety and quality of drinking water.
