In this work it is carried out a study of the main sources of essential elements (Mn, Fe, Cu and Zn) and toxic elements (Cd and Pb) in canned vegetables: the raw material and ingredients used in their formulation, the changes introduced during thc technological process, packing and storage. It is also considered to be important to include in this work the limits of trace elements in vegetal products established in the legislations of some countries.
