Bioactive Anthocyanins in Selected Fruits – A Foodomics Approach

Anthocyanins are significant water-soluble plant compounds that have been widely studied for their potential medicinal properties. There is growing evidence from epidemiological studies and clinical human trials demonstrating the involvement of anthocyanin compounds (mono- and diglycosides as well as acylated forms) in metabolic pathways and enzyme activities responsible for cardiovascular-diseases, inflammatory processes, type 2 diabetes and obesity. This chapter provides a comprehensive overview of the current state of anthocyanins in the scientific literature, examining (i) analysis methods, related complexities and challenges; (ii) bioavailability and metabolism; (iii) bioactivity and potential health benefits and (iv) future research trends.
