Preparation of protein hydrolyzate

PURPOSE: To obtain high nutritive protein hydrolyzate by enzymatically hydrolyzing plant and animal-originating proteins using an enzyme extract collected from germinating sorghum grains. CONSTITUTION: In a preferred embodiment, the germinating sorghum grains are homogenized, washed with an organic solvent as acetone, extracted with a neutral aqueous solvent and then salted to collect an enzyme extract. Then, this enzyme extract is used to hydrolyze the proteins obtained vegetable and animal resources at an acidic pH to produce the objective hydrolyzate. The pH in the hydrolysis is preferably 3.0-6.5 and the proteins to be hydrolyzed preferably comprises 50-95% of proteins obtained from soybeans, sunflowers, cotton, milk and eggs.
