The invention relates to an installation (1) products of cooking, in particular clay products, the installation comprising: - a tunnel (10) of products of cooking having a longitudinal direction (A); - a transport carriage (11) capable of receiving a plurality of products (9) to transport through the tunnel (10) and in the longitudinal direction (A) of the tunnel (10); - first means (14) for generating a main gas stream (8) into the tunnel (10) against the flow of the transport wagon (11). According to the invention, the installation further comprises recirculating means (6) of a portion (81) of the main gas flow (8), the recirculating means feeding back said portion of flow at the location of the area cooling (4) of the tunnel (10), after an upstream sampling.
