This chapter outlines the various methods involved in descriptive sensory analysis. The methods covered will include quantitative descriptive analysis, spectrum, free choice profiling amongst others along with the various advantages, disadvantages of using such methods and where best they can be used. Additionally, panellist selection, screening, training and profiling will be discussed and a detailed case study demonstrating a sensory term reduction process during training will be outlined with the use of helpful figures and tables.
