The discussion of Maillard reaction in vinegar

Through simulating Maillard reaction to prove that the reaction aslo can occur in vinegar;Through placing the vinegar and the simulated vinegar at different temperatures,and regularly measured the color changes at the storage period,to analyse the extent of the Maillard reaction in vinegar;Through adding Sodium Sulfite inhibitor to the vinegar to indirectly evaluate Maillard reaction on the impact of vinegar.The conclusion: Malliard reaction can occur in vinegar,and the reaction extent is large.
