Physicochemical and Microbiological Studies of Gold Milenium Apples

In many European countries apples are the fruits that are consumed in the greatest quantity. Many experiments have shown that apples possess high anti-oxidant activity, may inhibit the multiplication of cancer cells, reduce lipid oxidation, and lower cholesterol levels [1]. In this study the special Gold Milenium apple cultivar was chosen. Juices made from these fruits have gained a lot of awards for their excellent taste and healthy properties. The content of macro- and microelements, toxic metals, proteins, fats, carbohydrates and phenolic compounds in Gold Milenium apple juice was determined. Gas chromatography-mass spectrometry and infrared spectroscopy techniques were applied in the qualitative analysis of apple juice. The microbiological activity of the apple juice against E. coli, B. subtilis and C. albicans was tested. The data showed that the content of macro- and microelements and toxic metals did not exceed the permissible binding legal norms defined by RDI (Reference Daily Intake) and PTWI (Provisional Tolerance Weekly Intake). The polyphenol content of juices (apple juice alone and mixed with juices from other fruits) was found to be in the range of 374.8–798.3mg/L. Acknowledgements: This work was supported by grant no.
