Research on Pineapple-Chufa Compound Beverage

Pineapple-chufa compound beverage was prepared using pineapple(Ananas comosus) and chufa(Eleochairis tuberose) as main materials.The beverage formula was optimized via orthogonal experiment;while stabilizer and sterilization method were selected by single factor tests.The results showed that the optimum beverage formula was volume ratio of pineapple to chufa,1∶2;mass fraction of citric acid and sugar,0.15% and 8%,respectively.The best stabilizer was the mixture of 2.00 mg / mL sodium alginate and 0.05 mg / mL xanthan gum.The sterilization conditions of the product were sterilizing at 70 ℃ for 20 min,once per day for three days.The compound beverage prepared under the optimized conditions was light yellow,with smooth taste,special pineapple and chufa aroma;and the beverage quality was accord with the national standards.
