Classification of Fruit Juices

Abstract Within the fruit juice category, the regulated products (fruit juice, fruit juice from concentrate, concentrated fruit juice, water extracted fruit juice, dehydrated/powdered fruit juice, and fruit nectar) are defined on the basis of their composition and manufacturing processes as laid down by law, particularly the Fruit Juice Directive. Further classification is provided according to the dispersion system composition of fruit juices and purees. Finally, different product types are described depending on the juice preservation method.
