Production of processed food

1991 
PURPOSE: To newly obtain a processed food having high sterilizing effects on sporulating microorganism such as a bacterium of the genus Bacillus by subjecting a food containing polylysine added thereto to high-pressure treatment. CONSTITUTION: Polylysine in an amount of 0.001-0.02% based on the total weight of a processed proteinaceous food (e.g. a food made from a boiled egg or a boiled oyster as a base material), a processed nonproteinaceous food (e.g. a food made from a fruit or a vegetable as a base material) is added to the food and treatment is then carried out by applying 1000-10000 atm (preferably 2000-5000 atm) pressure thereto.
