Recuento, aislamiento e identificación de Enterobacteriaceae en hígado de cerdo comestible

espanolSe ha procedido a realizar el recuento de enterobacteriaceas totales en 60 muestras de higado de cerdo destinadas al consumo humano. De ellas, 25 se presentaron enteras, 25 fileteadas sin envasar y 10 fileteadas envasadas, todas ellas adquiridas en diferentes establecimientos de venta al publico de la ciudad de Zaragoza. Los resultados obtenidos muestran un aumento de la carga de enterobacteriaceas totales para las muestras fileteadas no envasadas, ya que estas presentaron un recuento medio de 11 x 10000 ufc/g, respecto a las muestras enteras y fileteadas envasadas, cuyos recuentos medios fueron de 20 x 1000 ufc/g y 12 x 1000 ufc/g, respectivamente. De las 220 cepas de enterobacteriaceas aisladas e identificadas, los generos mas frecuentemente aislados fueron Serratia y Hafnia en las muestras enteras, y Serratia y Escherichia para las muestras fileteadas tanto envasadas como no envasadas. El nivel de contaminacion por enterobacterias encontrado ha sido elevado, en todos los casos superior a 100 ufc/g, por lo que calificamos de deficiente la calidad microbiologica de este alimento. EnglishEnumeration of Enterobacteriaceae were performed from sixty samples of porcine liver destined to human consumption. Twenty five of these were whole samples, another twenty five were filleted and ten were filleted and packed. All of the samples were acquired in different shops of public selling in Zaragoza. Obtained results show an increase in the enumeration of Enterobacteriaceae for the no-packed-filleted samples, because their mean was 11 x 10000 count/g, as regards the whole samples and packed-filleted samples, because their means were 20 x 1000 count/g and 12 x 1000 count/g respectively. 220 strains were isolated from all the analysed samples. The most frequently genus isolated were Serratia and Hafnia from the whole samples, and Serratia and Escherichia from the filleted samples (packed and no packed). The level of contamination by Enterobacteriaceae was high, always higher than 100 count/g, so we calificate porcine liver´s quality as deficient.
