The invention relates to a purslane extractive used as an antioxidant of walnut oil, and belongs to the technical field of food material. According to the purslane extractive used as the antioxidant of walnut oil, the additive amount of the purslane extractive is 0.01% to 0.03% of total mass of walnut oil. Natural purslane extractive used as the antioxidant of walnut oil has better antioxidant effect and also has the advantages of being safe and environment-friendly. Moreover, the oxidation resistance when 0.02% of purslane crude polysaccharide is added in the walnut oil is better, and the peroxide number is minimum and the effect is maximum eight days later under the condition of 50+/-0.5 DEG C.
