The evolutionary innovation of milk

Milk had a great importance in the evolution of mammals, and within them in the evolution of hominines. In our species Homo sapiens several alleles maintain in adults the ability to ingest milk without damage. The highest frequency of individuals tolerant to lactose is shown in northern and central Europe. In Africa, Asia, and Middle East individuals tolerant to lactose are present only in populations that breed animals for milk and dairy products.
