Production of sheep and goat cheeses in Argentina

In the present work an overview about the production and characteristics of sheep and goat cheeses in Argentina is given. The following information is included: livestock existences and distribution by provinces, dairy farms, breeds, production of cheese, some data about physicochemical composition and characteristics of cheese marketing. The present and the future of these cheeses are also analysed.
