Application of fluorescence spectroscopy in classifying apple juice according to the variety

Abstract The variety of the raw fruit is important for the quality and authenticity of fruit juice. To classify the apple juice according to apple variety and geographical origin, fluorescent spectroscopy was applied to detect the apple juice and partial least squared (PLS) method was used to analyze the fluorescent spectra to determine the variety of the apple. Totally, 89 samples of two varieties from Yunnan and Xi’an were used to demonstrate the effectiveness of the method. The model was built with 62 samples in the training dataset. The rest 27 samples were used to validate the model. The model revealed satisfactory discrimination of apple juice, provided a 100 % training rate and 96.3 % testing rate. The results obtained indicated that fluorescent spectroscopy combined with PLS method can be successfully applied to the traceability and quality control of the fruit juice.
