2020
Research on the full utilization of the egg is scarce. The circular food economy proposes the full utilization of food avoiding waste and reuse. The article aims to conduct a systematic review on the use of eggshells. Given that it can be consumed as food rich in minerals and proteins proposing the full utilization of food and reducing waste. Thus, articles were researched (2009–2019) in the Web of Science, Scopus (Elsevier) and Scielo databases. Of 591 articles, 179 were included and the full abstracts were read and only 41 were included in this study. The main points worked were the inclusion of eggshell as food, biodiesel, biomaterial and building material. The articles were classified according to the most recurrent themes about the subject, presenting a summary of the articles found and presenting the state of the art on the subject. It is concluded that there is a growing global interest on the utilization of eggshell and that the eggshell has high nutritional value in calcium, and may supply nutritional deficiency in situations of extreme poverty.
