Analysis of Muscle Nutritional Components of Schizothorax kolzovi and Schizothorax grahami in Upper Reaches of Wujiang River

The results of the experiment that component of protein in the fresh muscle of Schizothorax kolzovi and Schizothorax grahami respectively were 15.49%and 15.78%,with fat 1.03%and 2.29%,ash 1.06%and 1.11%.There were 71.72%and 73.21%of unsaturated fatty acids in total ones.The total content of 18 common amino acids were 75.20%and 79.14%(dry weight accounted for muscles),the total content of 10 essential amino acids were 31.95%and 32.38%,and accounted for 42.51%and 40.91%in the 18 common ones.The total content of 4 fresh taste amino acids were 30.03%and 30.40%,accounted for 39.97%and 38.42%in total amino acid.According to the amino acid score(AAS),the first limited amino acid of the two species was methionine + cystine,and second for tryptophan;and according to the chemical score(CS),the first was tryptophan and the second for methionine + cystine.
