Glutenin macropolymer (GMP), an important component of wheat (Triticum aestivum L.), consists of high weight (HMW-GS) and low-molecular-weight (LMW-GS) gutenin subunits. In wheat, the subunit composition and GMP characteristics are important factors affecting processing quality.
