Traditional and Regional Cuisine in Urban Space

An increase in interest in traditional and regional cuisine is one of the most important trends in contemporary gastronomy. Many restaurant owners and chefs have returned to traditional recipes that require local and regional products. This renaissance has been influenced by consumers who have become tired of the monotony of fast-food gastronomy. Another factor supporting these trends is the growing popularity of culinary tourism. The chapter illustrates the issue by analysing the distribution of restaurants and bars in Madrid offering regional Spanish cuisine; restaurants serving Polish cuisine in the Old Town of Warsaw; and stands selling Krakow’s traditional obwarzanki.
