The invention provides a preparation method for a composite vegetable solid beverage. The preparation method comprises the following steps: cleaning burdock, white radish leaves, carrot, white radish and mushroom, then mixing the cleaned burdock, white radish leaves, carrot, white radish and mushroom according to a ratio of 5: 3: 2: 2: 3, then carrying out slicing and allowing a sliced mixture to enter into a colloid mill for pulp refining so as to prepare composite vegetable pulp; and subjecting the composite vegetable pulp to hydrolysis by pectase and cellulose, plate and frame filtration, concentration, spray drying and the like so as to prepare the composite vegetable solid beverage. The composite vegetable solid beverage is rich in functional oligosaccharides, polyphenols and a plurality of amino acids, vitamins and mineral matters, can be more easily absorbed by intestinal tracts and has a plurality of functions like immunoregulation, aging delaying, blood pressure reduction and antianaphylaxis.
