Abstract Milling or flaking is one of the most critical steps in the cereal making process, especially for cereal grains such as rice, wheat, and oats. The final shape and size of the finished product is largely controlled at the milling process. It has a significant effect on the overall appearance and weight of the finished product. It also impacts the color and taste of the final product. Improper milling results in poor product quality. Premilling processing conditions and environment also affect the performance of the products subjected to the milling process. The milling process involves compression of the food matrix, be it an individual grain or a grain composite (like a pellet), between rolls operating at high speed, to achieve the desired thickness and shape.
