Research on quality and safety control mechanisms and traceability system of dairy supply chain

In recent years, it was crucial that we need to explore the quality and safety control mechanism and a traceability system for dairy supply chain because of frequent dairy security incidents. The paper analysed the composition structure of the dairy supply chain based on the viewpoint of system, and used HACCP to analyze the monitoring mechanism of quality assurance for dairy supply chain, then importd GS1 to analyze the traceability mechanisms of information sharing. Finally, the paper combined HACCP with GS1 and established a traceability system for dairy supply chain. It is hoped that the paper can provide decisions support for the related dairy products management department and consumers.
