Cephalopod Cuisine—Its Global Reach

In this chapter we are going to explore the various ways in which cephalopods have been incorporated into the cuisines of virtually all parts of the world, going right back to ancient times. We will provide many examples of how they can be prepared to make traditional dishes as well as inventive new ones. The culinary techniques needed to do so are based on an understanding of cephalopod anatomy and of which parts of the animals are best suited for eating, as described earlier in the book. It will become apparent that although the particular properties of cephalopods pose challenges, they can also be used to advantage.
