Innovative extraction technologies for high-value compounds

Abstract This chapter provides an overview of extraction technologies for high-value compounds. This chapter summarizes conventional processes and innovative extraction protocols such as ultrasounds, microwaves, high pressure, and enzymes to extract high-value compounds from pulses. The use of these technologies to improve the functional properties of the extracted compounds, inactivate antinutritional factors, and modify the biological attributes of pulse ingredients will also be discussed together with the main challenges and future trends of the application of these technologies in the pulse industry.
