Silicon-containing ester spice compounds and preparation method thereof

The invention provides silicon-containing ester spice compounds (I) which are as shown in a formula (I). The compounds have fragrances such as peppery taste, herbal fragrance, fruity fragrance or musk taste due to different substituents R, so that the compounds can be used for daily blending. A preparation method comprises the following steps: carrying out reduction reaction on a carbonyl group of silica dehydrated herbac (II); and then carrying out esterification reaction on acyl chloride (RCOCl) under an alkaline condition to prepare the silicon-containing ester spice compounds (I) with a high yield. The method provided by the invention is high in preparation yield, simple and feasible in experimental equipment and operating process and convenient for industrial production. The formula is as shown in the specification.
