Manufacture of mandioca (Manihot sculenta) and other tropical roots could be a good choice to increase the offer of a new snacks to the Latin-American consumers. The objective of the present paper is to relate the technology for producing coextruded filled mandioca with spiced ground beef called «yuca rellena». The procedure start with the manufacture of mandioca roots to produce a puree mixed with corn starch and wheat flour. Forming of the end product was made employing a Rheon KN-300 coextrusion machine then quick frozen and packing whith flow wrapping machine. Paper show size, weights of the inner and outer materials also the chemical composition, microbiological aspects and sensorial analysis.
