ANALYSIS OF THE BIO-CHEMICAL COMPOSITIONS AND EVALUATION OF THE NUTRITIVE VALUE IN MUSCLE TISSUE OF SILVER POMFRET PAMPUS ARGENTEUS IN BOHAI SEA

The nourishment compositions in muscle tissue of silver pomfret is investigated in Bohai Sea by bio-chemical analytical methods in this paper,the results indicated that the average content of water was 76.22% in the muscle,the protein 16.76%,the lipid 5.037%,the ash 1.31%,and the carbohydrate 0.68%;glutamic acid content was the biggest in 18 kinds of amino acids of the muscle tissue,aspastic acid was the second,lysine was the third;the main fatty acids in the muscle were as follows:C18:1(n97)C16:0C22:6n3 C16:1n7 C18:0,saturated,monounsaturated,polyunsaturated fatty acids and EPA plus DHA represented 23.32%~33.15%,22.49%~29.97%,13.11%~22.50%,and 7.18%~10.08%.Nutritive value of silver pomfret muscle was evaluated by FAO/WHO essential amino acid model in 1973.Its score of amino acid ratio coefficient was 83 and the first limited amino acid was leucine.
