Isolation,identification and fermentation characteristics of lactic acid producing bacteria from pickling vegetables

Eighty-six strains of lactic acid producing bacteria were isolated and identified from many sorts of pickling vegetables.Five strains with excellent characteristics in acid production and the ability for the nitrate degradation were selected.By morphology appraisement and the test for physiology and biochemical event,there are two Lactobacillus plantarum,one Lactobacillus brevis,one Lactobacillus pentosus,one Leuconostoc mesenteroides subsp.dextrainicum.The fermentation characteristics of these five strains were also studied.
