PURPOSE: To reduce reabsorption of water by an edible product having low water content and to improve durability of the product against moisture by hydrolyzing a cereal powder source material with pentoxanase and b-glucanase to a specified linear polymn. degree. CONSTITUTION: Pentoxanase, β-glucanase or a mixture of them is added to a cereal powder material to hydrolyze a water-insoluble hemicellulose to obtain <100, preferably <50 and most preferably 3 to 17 linear polymn. degrees of the hydrolyzed product. Then the products is heated to decrease the water content. At the same time, the enzyme compsn. is inactivated to make the product edible. The edible product means, for example, cookies, crackers, biscuits, pet foods, cereal powder and cocoa.
