2014
The invention relates to meal-replacing drink rich in peanut lecithin and belongs to the technical field of food processing. The meal-replacing drink rich in peanut lecithin comprises the raw materials in parts by weight: 50 parts of soya bean, 12-15 parts of cocoa powder, 25-30 parts of dietary fiber powder, 20-25 parts of purple sweet potato powder, 10-15 parts of peanut lecithin, 1000-1200 parts of water, 0.5-1.2 parts of citric acid, and 30-60 parts of sugar powder. Cocoa powder is mellow in ester fragrance which is easily hated, and added citric acid is capable of neutralizing mellow ester fragrance of cocoa powder and enabling the product to have refreshing fruit fragrance and promoting appetite. Firstly cocoa powder is added into soybean milk, and then citric acid is added, so that generation of flocculent precipitate is obviously reduced, while simultaneous adding of citric acid and peanut lecithin does not generate flocculent precipitate. The fineness of the product is obviously improved by adding peanut lecithin for two times.
