Update on Listeria monocytogenes : reducing cross-contamination in food retail operations

Abstract: Listeria monocytogenes is a leading cause of severe foodborne illness in the developed world. This chapter reviews cross-contaminatiocpn with L. monocytogenes at retail points, drawing upon what has been learned during two decades of research in food processing settings where appropriate. In particular, insights derived from a quantitative microbial risk assessment of L. monocytogenes in US retail delicatessens are reviewed, and the efficacy of selected mitigation options predicted by this risk assessment is highlighted. In addition, relevant guidance documents are summarized, and data gaps and areas for future research are identified.
