To enable operation of simmering to save energy, it is proposed that the control unit (16) is configured for, during the heating phase (26), detecting a boiling temperature (TB) of the liquid (28) contained element in the cooking utensil (14), and determining the nominal temperature (TS) dependently boiling temperature (TB).
