Lead Concentration In Foods And The Estimation Of Health Risk In China

Objects: In order to understand the lead concentration and distribution characteristics in the foods and daily intake of residents by diet in China, we collected the literatures published in last decade that reported the lead concentration in Chinese foods. Methods: Using the Chinese and English keywords such as food, vegetable, grain, soil, lead, heavy metal, pollutant, concentration, daily intake, health risk and so on, we have searched, collected, and screened the existing literature published in the last decade via a criterion. The criterion was that there was at least one kind of food type with mean or median value of lead in the report. The literatures only with range and over standard rate of lead were not brought into our study. Results: The data in the 136 articles were summarized and analyzed. And we found the lead concentration in vegetables, grains, beans, tubers, meat, livers, aquatic products, preserved eggs, eggs, milk, fruits, fresh edible mushrooms, dry edible mushrooms, drink and water, ...
